Bamboo shoots are a vegetable that is in season from April to May.
It is a common ingredient in Japan, and is cooked in various ways such as boiled, fried, or added to the mixed rice dish “Takikomi gohan”.
Bamboo shoots are harvested just before they sprout from the ground. If they emerge too far out of the ground they will harden and not be suitable to eat.
It's a delicious ingredient, so please try it if you have the chance.
